A chapter of the wine cellar’s history is currently turning.
We are demolishing the historical concrete fermenting room to cater for the 300 barrels which are currently in farm yard buildings 3km from the Wine Cellar. We would like to improve the vinification work and storing conditions of the wines in barrels by repatriating them to a thermo-regulated wine warehouse.
Another chapter is opening at the same time as we have decided to harvest 20% of the surfaces of the wine cellar’s members in cagettes and to process this harvest in small vats in order to make wine batches per plots.
Therefore a new fermenting room composed of 28 small vats has been created and will allow us to significantly increase the quality of our red wines.
The traditional harvesting method has not been forsaken. We are moving the harvest reception area, the vats and the presses. We are installing a new reception tray which is more harvest friendly. We are buying two new presses that are better adapted to the qualitative work that we wish to implement.
Needless to say that during the renovations there will be a few inconveniences with regards to your visits: there will no longer be a wine warehouse guided tour and the number of parking spaces will be limited. However our boutique will still be open and we would be delighted to welcome you for a tasting session.
